Roasted Rutabaga

What is a rutabaga??

When we received an entire pallet of these waxy, purple-ish, round vegetables labeled “rutabaga,” I had no idea where to start! Turns out, rutabaga is very similar to a turnip and other root vegetables. Before you decide you hate turnips (and therefore rutabaga), try this recipe! In my opinion, with a little oil, salt, and pepper, anything crisped is delicious.

You will need: 

  • 1 whole rutabaga
  • Olive oil
  • Salt and pepper

 

Directions:

  1. Peel your rutabaga with a vegetable peeler or a sharp knife.
  2. Cut into ~1 inch cubes.
  3. Spread on a tray and toss in olive oil (or butter) so that each cube is coated
  4.  Add salt, pepper, and any other spices you want to try! (I like rosemary)
  5. Bake at 350°F for about 40 minutes until browned and softened.=
